Will raising the vehicle affect handling?

A modest, correctly matched lift does not. An excessive lift without matched dampers and corrected geometry does, and we will say so rather than fit it.

Can I lift only the rear?

Only where the vehicle is rear-loaded. Otherwise it changes the rake and pushes the load onto the front suspension.
